Easy Chicken Parmesan

Kids can be picky eaters.  When you come across a recipe that gets everyone clearing their plate, you make sure it gets added to your regular line-up.  For me, Chicken Parmesan is the latest in the line-up.  (Salmon Patties are also a huge hit around here.)

Not only does this recipe get them cleaning their plates, but it is pretty easy to make, too!  (And who doesn’t love easy?)easy and delicious chicken Parmesan recipe via There's Just One Mommy

 

Chicken  Parmesan Recipe

Ingredients:

  • 4 chicken breasts
  • 3 Tablespoons melted butter
  • 1/3 cup canned grated Parmesan cheese
  • 1/4 cup seasoned bread crumbs**

** I make my own bread crumbs before starting.  I just add 2 pieces of toast (tear it up first), 1/2 Tablespoon oregano and 1/2 Tablespoon garlic powder to the mini food processor and it’s ready in seconds.

 

Directions:

  1. Preheat oven to 400 degrees Fahrenheit.
  2. Pound the chicken breasts to 1/2 inch thickness.
  3. Mix seasoned bread crumbs and Parmesan cheese together.
  4. Dip chicken in butter and then pat it in the bread crumb mixture.
  5. Place chicken in greased baking dish.
  6. Bake 20 minutes or until chicken is thoroughly cooked through.

I serve our chicken Parmesan with a side of spaghetti and Italian-style vegetables from the freezer aisle.

      The first time I made it was several years ago and then for some reason I stuck the recipe in the box and never made it again until recently. Now the kids ask me for it! 🙂

    Thanks for coming by to visit my Granny Fabulosa blog. I like this recipe, but I like the eggplant version even more! Yum! I will have to try it soon, and if I really like it, I’ll blog about it and pretend I developed it myself. Just kidding!!!
