Super Simple Hamburger Helper Burrito

In a perfect world there would be time to do it all during the day:  school/work, get daily chores done, play with the kids, and get a hot meal on the table in time for dinner.

But I’m going to be honest with you.  Even as a SAHM, there are days that after homeschooling, catching up on laundry and dishes, and running around with the kids, the last thing I want to do is make dinner.  

And since a personal chef is out of the question, I sometimes stock a little help right in my pantry. 

The kids have fallen in love with this cheesy enchilada Hamburger Helper recipe, and I’ve fallen in love with how easy it makes getting dinner ready in a hurry.

I have a picky eater right now, so I was happy to see how many varieties of (affiliate link) Hamburger Helper are available now a days.  

With lasagna being one of my daughter’s favorite meals, I knew I had to pick up the lasagna version.  (She is going to love having the taste of lasagna on a weeknight!)  

The cheesy enchilada and chili macaroni also made it home to our pantry.

Cheesy Enchilada Hamburger Helper Recipe

Ingredients:

  • Package of Hamburger Helper — Cheesy Enchilada variety 
  • 1 lb. hamburger meat
  • 1/2 cup  + 3 tablespoons milk
  • 2 cups hot water 
  • can of black beans, drained
  • tortillas
  • sour cream and salsa (optional)

We couldn’t wait to try the serving suggestion on the back of the box.  And we weren’t disappointed.

Follow the directions to cook the packaged dinner.  

Once it is finished cooking, add a can of drained black beans and let it simmer 5-10 minutes.   Adding beans is a great way to add a little more fiber and stretch your meal even further.

Hamburger Helper Cheesy Enchilada meal

To serve, spoon it into the center of a warm tortilla and roll it up like a burrito.  

Garnish with salsa and sour cream, if desired.

Sometimes it’s not the cooking, but just trying to come up with a dinner idea everyone will eat that is the problem.  

These cheesy enchilada Hamburger Helper burritos were a big hit.  Having a few of these in the pantry for quick and easy weeknight meals is going to come in handy.
