Quick and Yummy Dinner

Ever get back from vacation and feel like you need a vacation?  You know, you have suitcases to empty, laundry from your trip, and an empty fridge that means you need to take a trip to the grocery store…

That’s how it’s been here.

I didn’t feel like toting the kids to the store with me the day after we got back, but I still wanted to cook a home-cooked meal and not just heat up a can of soup for dinner.  So, I hunted around…  We had one chicken breast in the freezer upstairs (not enough for 4 of us), and no fresh veggies, spaghetti, or other “quick to fix” items.  I headed downstairs to check that freezer and found a box of pierogies.  recipe with pierogiesUsually I serve them as a side dish, but then I found a pound of frozen ground turkey and decided to get a little creative.

I browned the ground turkey in a skillet.  Then I added some spaghetti sauce.  I mixed the frozen pierogies and ground turkey mixture in a cake pan and stuck it in a 350 degree oven for 20 minutes.  Then I covered it with the last bit of shredded cheese we had in the refrigerator and baked it another 10 minutes.

It was smelling pretty good — even my oldest came out to investigate what smelled so good.

What came out was a little like lasagne…and oh, so yummy!quick dinner idea

I dished up a cheese-covered pierogi and a little meat for each kid.  toddler-approved dinnersMy youngest likes to turn away anything “different,” so I told him it was lasagna and reminded him how he liked lasagna.  He took one bite, and said, “Yum!”

After my oldest had 3 helpings, I had to tell her we needed to save some for Daddy.

Next time I’m hoping to have some onion to add to the adult half, and maybe some mushrooms or green pepper…. But this is definitely going to be added to my quick meals list!

    OMG WHAT AN AWESOME IDEA. I would have never thought of that. Going to add this to pinterest under recipes I want to try. I can use soy cheese…. still shaking my head over how great this is.

    I know what you mean about needing a vacation from the vacation lol we just had one of those! LOL The meal sounds YUMMY! Way to girl!

    Those fast meals are the saving grace when you have little kids. Potatoes, pasta…. and now pierogi. I’ve been meaning to put some of those fast, budget-conscious meals we used to have all the time on my blog. One we used to have a lot was a casserole of corn tortillas filled with sour cream, potato, and cheese, topped with green tomatillo salsa.

      I had never heard of them until my sister introduced me to them a few years ago. We always just had them as a side dish, but I’m thinking they are pretty tasty in a main course!

    Always, always, always! After every vacation I say at least once, “I need a vacation from my vacation!” We usually get pizza! Growing up, my parents had friends that used to invite us for dinner the night we got back. At first it seemed crazy, but I remember my mom remarking how nice it was not to have to cook.

    My ex husband, of all people, LOVED those things…needless to say, I don’t keep them in the house anymore.*snickers* In my defense, they have never come home from their father’s asking for them, or I would buy them! 🙂

      Oh, getting pizza after vacation was what we always did growing up. I wish we had someone who would deliver out here! I just hate having to get back in the car to go to the pizza place after all the driving home.

      I definitely recommend it — they are pretty yummy by themselves or cooked up like we did in the recipe.

    How much spaghetti sauce did you put in it and could i use hamburger instead of turkey?

      You could certainly use hamburger instead of the ground turkey. I honestly don’t know how much sauce I use…I just kind of eyeball it. Use enough to just cover the pierogies.
